What Is Fennel Pollen?
Fennel pollen is the golden, powdery pollen collected from the blooms of wild fennel
(Foeniculum vulgare). Originating from Tuscan Italian cuisine, it is known as the
"spice of angels" for its impossibly delicate yet powerful flavour. Because it is
hand-harvested in small quantities, it is rare, precious, and intensely aromatic.

Sweet, anise, honey, and floral — like fennel seeds but amplified and refined.
Far more complex than ground fennel powder. Even a quarter teaspoon transforms a dish.
